Variation in starch quality traits including amylose and amylopectin content and flour viscosity profiles were evaluated. EMS mutants exhibiting an alkali spreading phenotype (ASV) revealed candidate SNPs in Sobic.004G963700 and Sobic.010G093400. Comparative genomics identified Sobic.010G093400 as a SSIIa, and Sobic.004G163700 as a SBEIIb.
